Persian Potato Eggs

Persian Potato Eggs

  • 1 Small red onion, sliced thin
  • 5 Garlic cloves, sliced thin
  • 2 Tbl spoons Grape seed oil
  • 1 Tbl spoon Cumin seeds
  • 1 Tbl spoon Red chili flakes
  • 2 potatoes, sliced thin
  • Salt
  • 4 Eggs
  • Microgreens, to garnish


  • In a sauté pan add the oil, onions and garlic and cook for approx. 5 mins. 
  • Add the spices and the potatoes and stir. Add about 1/3 cup of water, salt and cover on med-low flame. 
  • The potatoes should cook in approx. 20 mins. 
  • Flatten the potatoes and break the eggs on them, salt and cover. Let the eggs cook to your desire.
  • Garnish with microgreens/herbs.
