Cucumber Salad


  • 2 medium cucumbers 
  • 1/4 cup rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp maple syrup
  • 1 tsp salt plus extra
  • 2 tbsp sesame seeds toasted


  • Wash cucumbers
  • Slice very thin using a mandolin or knife
  • Sprinkle with salt and mix well
  • Place in colander or strainer and place in the sink to drain for 30 minutes
  • Whisk together rice vinegar, sesame oil, and syrup in a medium bowl
  • Gently squeeze sliced cucumbers dry with paper towel or clean kitchen towel
  • Add to bowl with dressing and toss to combine
  • Season with additional salt to taste and garnish with sesame seeds
