Jam & Jelly Duo

Can’t decide if you prefer jam or jelly? No problem. With our Jam & Jelly Duo, you don’t have to! 

Jam Versus Jelly

Here’s the difference between the two. Jam is made with whole fruit that’s been crushed or cut into pieces as part of the jam-making process. So, jam offers up more of a texture. Jelly contains the fruit of the juice (or vegetable), which provides a smooth, clear spread.

Our signature jams and jellies are both made in collaboration with Emily Hutton’s Prospect Jam Company, an artisan company in Ohio. Her mission is to “create intentionally unique experiences through the craft of seasonal preservation while promoting creativity and collaboration”—and that really resonates with us.

Viola Champagne Jelly

Sit back and picture the process! Apples are juiced and then cooked with champagne. Meanwhile, edible violas that were grown and harvested with care at The Chef’s Garden are tenderly dried before being added to the apple-champagne mix. 

These delightful edible flowers turn the mixture into a gorgeous shade of ruby red. This is a sign that it’s time to strain what remains of the flowers. Before our Viola Champagne Jelly is jarred and sealed, the jelly is topped with dried edible flowers, which rehydrate in the steam. The result: a one of a kind taste experience that’s visually stunning. 

When the jar is opened, stir in the blooms and use this unique jelly on sandwiches or on a piece of cheese. Spread it on carrots or use this artisan jam as the crowning glory on an angel food cake.

Strawberry Jam

With this unique bread mix, you can conveniently bake loaves of bread with a crispy crust, chewy crumb—and incredible aroma. Close your eyes, imagine the scent of bread baking, and breathe in deeply. What you imagine can come to life as you make and consume the bread.

The dry mix creates a versatile dough that allows for toppings both before and after baking, making it extremely versatile and expressive. 

Strawberry Jam in Collaboration with Prospect Jam Company

Emily Hutton of Prospect Jam Co. brainstormed and experimented with our chef team to find exactly the right ingredients and proportions for our strawberry jam. The result? Optimal flavor, texture, and visual appeal, perfect for spreading over freshly baked bread.

This artisan jam allows the farm to reduce food waste and extend the reach of produce while creating an utterly delicious product. Emily is the ideal collaborator, too, as she intentionally inspires “unique experiences through the craft of seasonal preservation while promoting creativity and collaboration.”

Items in this offering pair together perfectly. That said, you can also use the bread mix to make delicious muffins, wraps, flatbreads, pan and wood-fired pizza crusts, rustic batards, ciabatta, and much more. Farmer Jones Farm Gomasio is a seasoning composed primarily of toasted sesame seeds, delicate flakes of kosher salt, and a blend of herbs from The Chef's Garden. With ingredients like bee pollen, fennel pollen, and alliums playing supporting roles, this batch of gomasio is a friend to many foods.

In this batch of gomasio, we leaned into ingredients that pair nicely with winter vegetables. While it excels on spinach salads and root vegetables, its talent for seasoning savory foods is ambidextrous. Consider Brussels Sprouts, Sweet Potatoes, Beets, Cauliflowers, Spinach (cooked or raw).

Most applications of gomasio are as a finishing component. Still, it is well suited to be an ingredient included in the cooking process (sesame crusted anything just got better) It can be used with crunchy breadcrumbs for a crispy breading, directly in marinades for meats and vegetables, and as the salt in homemade soups or sauces.

Fabiaceae, pronounced "fuh-bay-see-ee" is the Latin botanical genus that represents the bean family. 

Butterfly Pea Bloom, Organic African Rooibos, Anise Hyssop, Organic Camelia Sinensis.

This tea blend is almost creamy with a foundation rooted in its botanical namesake. Rooibos (red bush) is a desert shrub in the bean family grown in Africa. Its leaves are used to produce a common herbal tea. We grow butterfly peas on property for their vibrant blue infusions along with anise hyssop (a native to North America) for the bees and for our teas. Serve this tea warm or iced with a lemon wedge.

Brew 1 Tbsp for 3 minutes in 200ºf water. Brews to a blue color. For a fun color change add some lemon juice.

Of all the memorable loaves of bread that have come from the Culinary Vegetable Institute kitchen, no other has been so widely beloved as Dario's Focaccia. It is a gratifying marriage of crispy crust, chewy crumb, and incredible aroma. Loaves are easy to produce and even easier to consume.

The dry mix contained in this box will make a versatile dough that takes well to topping both prior and post-baking. As a result, it can be as expressive as you are willing to be. It shapes well into rustic batards and stretches beautifully for something closer to ciabatta. It will also work well for pan and wood-fired type pizzas.

Of course, and most easily of all, this dry mix will produce Dario's Focaccia.

Meet Chef Dario

Chef Dario Torres first learned cooking skills from his grandmother who took care of him and his sister until he was fourteen while their parents worked to offer their children a better life. Even though he enjoyed cooking, he wasn't sure he wanted to be a chef. He had dreams of becoming a scientist or an engineer because of his love of science and math until he caught an episode of Master Chef on The Discovery Channel and his whole world was turned upside down. 

We love to collaborate with like-minded people and companies—and when the results are as delicious as these five flavors of marmalade, it’s a true win/win.
