There are many varieties of kale. Our testing has shown some variation in mineral content between different varietals for kale. Generally speaking kale is a good source of vitamins including beta-carotene (eye, bone, and immune health), Vitamin C (collagen production and antioxidant), and Vitamin K (bone health and cardiovascular health), folate (reproductive health and red blood cell function), alpha-linolenic acid (ALA) (anti-inflammatory), lutein and zeaxanthin (prevention of macular degeneration and cataracts). Kale is also a good source of minerals including potassium (cardiovascular health), calcium (bone health), and zinc (immune and hormone health). Kale contains many beneficial phytonutrients such as chlorophyll, myrosinase, glucosinolates, beta-carotene, flavonols, and lignans.
