The beauty of salads, Chef Jamie Simpson from the Culinary Vegetable Institute shares, is that the farmer has already done nearly all the work for you. When enjoying fresh salad ingredients that were regeneratively farmed and harvested at the peak of ripeness with love at The Chef’s Garden, you benefit from the maximum in flavor and nutrition. Salads can serve as a mouth-watering main entrée or the perfect side dish, and you can add different seasonal ingredients each time to make your salad a uniquely wonderful taste experience.  

They are a perfect prep ahead meal to take to work or school. You can also use salad greens to stretch leftovers into a filling and nourishing meal. 

Salads are packed with phytonutrients (including antioxidants), vitamins, minerals, and fiber. They are a great way to increase your intake of vitamins A,C,E, folate, and K and to support a healthy gut microbiome. The high fiber and lower carbohydrate content of this nutrient dense box may help to stabilize blood sugar following a meal and our bitter greens may help to improve digestion by stimulating your own digestive juices.  

To retain the most nutrients from these vegetables it is best to eat them raw, blanched, or lightly sautéed.

Exactly what’s included in each of our salad boxes will vary by season, but they’ll always be perfectly curated with just the right amount of farm fresh greens and other veggies. 

This box contains vegetables for two for approximately one week.

Strawberry Spinach Salad

  • Spinach
  • Onions

Raw Asparagus Salad

  • Asparagus

    Dressing Recipes

    For optimal nutrients from your salad dressings use: 

    • Unpasteurized vinegar with the mother culture
    • High polyphenol olive oil
    • Redmond's Real Salt
    • Organic herbs and spices 

    Poppy Seed Dressing

    • 1/4 C white sugar
    • 1/4 C Olive Oil
    • 2 T white vinegar
    • 1 T sesame seeds
    • 1 T poppy seeds
    • 1 T minced onions
    • salt and pepper to taste

    Herb Dressing

    • 1/4 C olive oil
    • 1 T thyme
    • 1 T chives
    • zest and juice from 1 lemon
    • 1/4 t crushed red pepper
    • salt and pepper to taste
