The beauty of salads, Chef Jamie Simpson from the Culinary Vegetable Institute shares, is that the farmer has already done nearly all the work for you. When enjoying fresh salad ingredients that were regeneratively farmed with love at The Chef’s Garden, you benefit from the maximum in flavor and nutrition. Salads can serve as a mouth-watering main entrée or the perfect side dish, and you can add different toppings each time to make your salad a uniquely wonderful taste experience. 

They are a perfect prep ahead meal to take to work or school. Salads are quick and easy to make ahead of time and are packed with quality vitamins, minerals, antioxidants and fiber. They are a great way to get your servings of leafy greens each day. You can also use salad greens to stretch leftovers into a full meal. Side salads pair well with any entree and can be used for fill up on low calorie food before enjoying the rest of the meal. This helps you eat-less and helps maintain a more stable blood sugar level. 

Exactly what’s included in each of our salad boxes will vary by season, but they’ll always be perfectly curated with just the right amount of farm fresh greens and other veggies. Here are spring salad ideas to enjoy!

Enjoy the following salad options - or create one of your own!

Option 1

  • Mesclun
  • Carrots
  • Cucumber
  • Add from home: red onion, hard-boiled egg, avocado, bacon bits
  • Serve with a lemon yogurt dressing

Option 2

  • Lettuce
  • Cilantro
  • Carrots, Onions
  • Add from home: corn, mango, choice of protein 
  • Serve with an Asian vinaigrette

Option 3

  • Arugula
  • Fennel
  • Add from home: strawberries, almonds, choice of protein
  • Serve with a balsamic vinaigrette or lemon yogurt dressing

Option 4

  • Kale

 Balsamic Vinaigrette

  • 1 ½ tbsp vinegar (balsamic, apple cider, sherry, red wine) 
  • 2 tsp Dijon mustard 
  • 2 tsp sweetener (jam, sugar, honey, maple syrup)
  • 2 tbsp oil (olive, avocado, grapeseed)
  • Salt and pepper to taste

Asian Vinaigrette

  • 1 clove garlic, crushed 
  • 2 ¼ tsp soy sauce 
  • 2 ¼ tsp rice vinegar 
  • ½ tsp brown sugar
  • ½ tsp toasted sesame oil
  • 2 ½ tbsp oil (olive, avocado, grapeseed)

Lemon Yogurt Dressing

  • 1 clove garlic, crushed 
  • 2 tbsp lemon juice 
  • 1 tsp Dijon mustard
  • 2 tbsp yogurt, plain
  • 2 tbsp oil (olive, avocado, grapeseed)
  • Salt and pepper to taste 

Red Wine Vinaigrette

  • ½ tsp spices (paprika, cumin, coriander) 
  • 2 tbsp red wine vinegar 
  • 2 tsp Dijon mustard
  • 1 tbsp honey
  • 2 tbsp oil
  • Salt and pepper to taste
