Seasonal Salad Box

The beauty of salads, Chef Jamie Simpson from the Culinary Vegetable Institute shares, is that the farmer has already done nearly all the work for you. When enjoying fresh salad ingredients that were regeneratively farmed and harvested at the peak of ripeness with love at The Chef’s Garden, you benefit from the maximum in flavor and nutrition. Salads can serve as a mouth-watering main entrée or the perfect side dish, and you can add different seasonal ingredients each time to make your salad a uniquely wonderful taste experience.
They are a perfect prep ahead meal to take to work or school. You can also use salad greens to stretch leftovers into a filling and nourishing meal.
Salads are packed with phytonutrients (including antioxidants), vitamins, minerals, and fiber. They are a great way to increase your intake of vitamins A,C,E, folate, and K and to support a healthy gut microbiome. The high fiber and lower carbohydrate content of this nutrient dense box may help to stabilize blood sugar following a meal and our bitter greens may help to improve digestion by stimulating your own digestive juices.
To retain the most nutrients from these vegetables it is best to eat them raw, blanched, or lightly sautéed.

Nutrient Dense
Your box will include a variety of Powerhouse, nutrient-dense vegetables, depending on the season, to help reduce the risk of chronic disease. As a result of our regenerative farming practices, we have found that our products often contain more minerals than the USDA average! The vegetables in this specially curated box are rich in potassium, fiber, protein, calcium, iron, thiamin, riboflavin, niacin, folate, zinc, and vitamins A, B6, B12, C, D, E, and K.
Green leafy vegetables are full of vitamins (A, B vitamins (including folate), C,E,K) and minerals (Mg, K, Ca) and are low on the glycemic index. Green leafy vegetables are also a source of nitrates which when eaten over time may help reduce blood pressure. They also contain antioxidants (ex. carotenoids) which contribute to their benefits for cancer prevention. Studies have shown consuming 2 to 3 servings of green leafy vegetables per week may reduce the risk of stomach, skin, and breast cancer.
Orange vegetables (like carrots, pumpkin, and sweet potatoes) are a good source of Vitamin A (beta-carotene) and can help reduce inflammation, support brain health, eye health, immune health, and reproductive health. Cooking many orange vegetables along with adding fat such as high polyphenol olive oil, pasture-raised butter, or coconut oil increases the amount of beta-carotene that your body can absorb. We are so excited to share with you our new “Eat the Rainbow” box, which is not only filled with beautiful regeneratively grown seasonal vegetables that represent each of the colors of the rainbow but is also full of phytonutrients, vitamins, minerals, fiber, and more!
There is nothing more beautiful (and Instagramable) than a box full of vibrant colorful vegetables just harvested and delivered right to your door! There is unlimited potential to be creative in the kitchen with this box. Create colorful salads, wraps, bowls, stir fry, and other plant-forward meals that will be packed with color and plant-produced compounds (also known as phytonutrients).
Phytonutrients are a big part of what makes vegetables beautiful and healthy! Phytonutrients have many potential functions in a plant, two of which are imparting color and flavor. Phytonutrients are considered non-nutritive, meaning they don’t have any caloric value but they have a ton of value when it comes to health. There are over 8,000 identified phytonutrients, and each plant has several hundred, making vegetables a preferred source of phytonutrients over a supplement that may contain only one or two single phytonutrient extracts.
People who consume more phytonutrients have been shown to be less likely to experience cancer, diabetes, heart disease, dementia, and diabetes as well as other conditions. Eating a wide array of phytonutrients is also a great way to support a healthy immune system and mood.

This Month's Vegetables

Lettuce
Field lettuce is crunchy, full of body, and a testament to the growing practices of the farm. All too often the lettuce we come across is a limp, wilted mess with little to offer in the name of flavor. These lettuces are nothing like that. The stems are rigid but tender, and the leaves are thin yet succulent. They are saline, sweet, and slightly bitter. While some varieties of lettuce are intense in one or 2 flavor profiles, these offer tastes that suit a variety of preparations. Think of them like elegant workhorses. Washed and quartered, they are ready for a colorful caesar salad. After a quick chiffonade, use them on an Italian sub or po-boy. Some folks even like to char or grill the whole heads on one side before using them.
Refreshing as they are, consider packing them out for a picnic in the park. Just remember to avoid dressing them until serving.
Citrus Crystal Lettuce
Citrus Crystal Lettuces are tiny succulents that quite literally gush with flavor. They can be quickly cooked but we find they excel at adding diversity of texture in cold soups and salads. Because of their nature, they retain crispness for an extended period. We often pick the leaves and blooms for use in our cold dishes. These Citrus Crystal Lettuces will hold their own on a crudité platter without immediately yielding to the summer sun. Gone are the days of parsley stems and in are the days of delicious, useful garnishes. Look for tastes of the ocean, mineral, and a slightly bitter spiciness.
Summer Squash
Summer is here! With it, comes its many fruits. The story of cooking in the summer is largely a story of cooking with ease. Many summer vegetables are fresh, tender, and quick to cook. A perfect embodiment of all of these things is summer squash. This scalloped variety, like other summer varieties, does not need to be cooked to be enjoyed. When ribboned or thinly sliced it marinades in minutes. Once seasoned and wilted, perhaps with the addition of chopped herbs or minced garlic, it is great on toast, tea sandwiches, or stand-alone as a carpaccio. If you opt to cook this squash, it won’t take long to do so and will immensely bring forward the flavors of the squash. The usual suspects of ratatouille, frittatas and savory galettes will all experience an upgrade if you use this high-quality squash when preparing them. Because of their natural sugars, these summer squash brown very well. You can grill them on skewers or sear them in a non-stick skillet on the stovetop to experience a deeper flavor profile.
English Peas
English Peas from the Chef’s Garden are sweet, aromatic, and full of pea flavor. As you will hear time and time again this summer, this vegetable is delicious raw or cooked. Whether you use these peas to make a chilled soup, toss them into a salad, or serve them in a pot pie, you will be sure to cherish the sweet, green flavor of legumes they bring with them. Taking inspiration from minty, mushy peas, one of our favorite things to do with these peas is to make pea guacamole or pea hummus. Essentially a purée of cooked peas, any herbs we have on hand, lemon or lime zest and juice, salt, and a bit of olive oil, this purée will have you wondering why you didn’t make it sooner. It does not need to be overly smooth, and can quickly come together in a mortar and pestle or food processor. Add the ingredients to taste, then try it as the base for a salad, or stand alone as a dip for crudités or crackers.
Remember as well that although their texture may change, the flavor of these peas is largely preserved when frozen. If for one reason or another you don’t get to them, you can freeze them in confidence knowing a summer soup can still be made on a future date.
Potatoes
Making it easier than ever to eat the rainbow are these purple potatoes. Loaded with nutrients and full of color to prove it, these potatoes are the comfort food we love, wrapped in a blanket of increased nutrition and flavor. For ease of use, you can cook these potatoes until fork tender the next time they are in your kitchen. After cooling them down, refrigerate them for later use. Next time you want to make potato salad, thicken a brothy soup, or make potato pancakes, the time-consuming task of cooking the potatoes will already be done! Asparagus
The season for asparagus is like its preferred cooking methods, very quick, and short in duration. Whether you grill, roast, sauté, steam, blanch, or prepare through any other means, try to avoid overcooking the asparagus for best results. Of course, one method to avoid this issue altogether is to enjoy it raw! This has the added benefit of preserving a lot of the nutrients and pigmentation in the non-green varieties. Like other summer vegetables, cooking to al-denté and dressing while warm in a preferred vinaigrette is a foolproof way to enjoy what the season has to offer.
Beets
In the best of ways, beets genuinely taste of the earth. It is their nature to take the concept of terroir to great depths. Beets are best served very simply for those who long to appreciate these nuances. We recommend a simple dressing of light oil, sweetened vinegar, and a touch of salt.
To simplify their preparation, we recommend cooking beets whole and in bulk, after which they can make their way into a variety of recipes.
Cooking in bulk saves time later in the week by shortening the longer cooking time to the few minutes it takes to reheat the cooked root vegetable.
For those who prefer a milder flavor from their beets, removing the skin will dampen the intensity of this root vegetable. This can be done before or after cooking. To remove the skin from raw beets, simply use a potato peeler. To remove the skin after cooking, cook whole beets by poaching or roasting in foil until fork tender. Afterward, use a paper towel to gently rub away the skin.
For Mezze fare, fold cooked and cut beets together with tahini, a splash of vinegar, a bit of cumin, and chopped herbs or citrus zest for an easy win.
Phytonutrients
What makes plants so colorful? It’s all about the phytonutrients! Phytonutrients (aka phytochemicals) are compounds produced by plants to help protect them from disease, sun damage, and predators like insects. Phytonutrients are what give plants their unique colors, smells, and tastes. Many phytonutrients have antioxidant properties, which means they help to protect our cells from damage. Studies show that people who eat more plant foods have a reduced risk of chronic diseases and enjoy better brain health and lower inflammation.
Biodiversity
Eating the rainbow is not only beneficial for your health, but it’s also good for the planet. Eating a wide range of differently colored vegetables promotes biodiversity. Although there are over 40,000 different edible species on Earth, it’s estimated that 75% of our food supply comes from just 12 species of plants and animals. This lack of diversity limits the number of phytonutrients, vitamins, and minerals that we’re consuming, not to mention that it is so much more fun to experiment with different vegetables!
Color, Mood, and Food
Including all of the tastes (sweet, salty, sour, spicy, bitter, astringent) ensures that you’re getting a variety of nutrients and supports healthy digestion. Our brains have evolved to associate color with taste: the more color you include, the more different tastes will be included in your meal. Even better—the more vibrant the color, the more flavorful the vegetable!
Colors also have measurable effects on health and mood, including influencing blood pressure, heart rate, respiratory rate, and sleep as well as helping us to experience feelings such as being relaxed, energetic, or happy. For example, we often associate orange and yellow with happiness, hope, and optimism and also associate orange and yellow foods with sweetness (think sweet corn, sweet potatoes, etc). When we think of green, we often associate it with health and nature. Green foods often have more of a bitter flavor (think dandelion, chicory, and other spring greens), which is partially from their higher calcium content and how genetics influence your taste perception as well as phytochemicals (like glucosinolates).

Nitrates from greens have been shown to support healthy blood vessel function and blood flow. The nitrates in greens and other nitrate-containing vegetables are actually broken down by the bacteria in your mouth and the acid in your stomach then converted to nitric oxide. Nitric oxide helps promote healthy circulation by relaxing the blood vessels which increases the amount of blood that’s able to flow through (this is also important for brain health). Having optimal levels of nitric oxide in your body may help to reduce elevated blood pressure and improve one’s ability to exercise. As we age, studies have shown the amount of nitric oxide in the body tends to decrease. Allicin is one of the active components in garlic that studies indicate may modestly reduce cholesterol (specifically triglycerides by 6-22%) and blood pressure. Allicin is activated when garlic is cut or crushed and exposed to water. To get the most cardiovascular benefit from your garlic before using it, rinse it with water, then cut/crush/chop and let sit for 5-10 minutes so that the enzymes in the garlic can work their magic to fully activate the allicin. The most wonderful thing about our garlic is that it does not need to be peeled and you can even enjoy the roots!

Purslane is referred to as the “salmon of the plant world” because of its high content of alpha-linolenic acid, a form of omega-3. One hundred grams of fresh purslane leaves (one serving) contain about 300-400 mg of omega-3s; 12 mg of Vitamin E; 25 mg of Vitamin C; 2 mg of beta-carotene; and 15 mg of glutathione. Purslane is excellent consumed fresh with its succulent leaves that are crisp and hydrating or used as a “pot herb” when making a stew or soup to add extra nutrients.

Oryza Tea

Fiber is often underappreciated but is vital to digestive health. There are many ways to categorize fiber starting with dietary fiber and functional fiber. Dietary fiber is naturally found in food and functional fiber is extracted then isolated from whole foods, then added to processed foods. At The Chef's Garden we enjoy eating and farming in harmony with nature and prefer eating our dietary fiber straight from the source along with all of the vitamins, minerals, and phytonutrients that work together to nourish the body.
Soluble fiber dissolves in water, slows down digestion (so that more nutrients can be absorbed), and forms a gel (think of chia pudding). Soluble fiber also has the superpower of being able to be fermented by microbes in the digestive tract. This fermentation can cause gas, so we recommend starting with small amounts and working your way up if you do not typically consume fiber-rich foods. Soluble fibers are also sometimes referred to as “prebiotic” fibers, meaning that they feed the microbes in the digestive tract (by fermentation). As a result of the microbes fermenting prebiotic fiber they form short-chain fatty acids which provide energy for the cells lining the colon as well as other beneficial functions. Soluble fiber may help reduce cholesterol and blood sugar. Examples of vegetables that contain soluble fiber include asparagus, brussels sprouts, garlic, onions, and carrots.
Insoluble fiber does not dissolve in water but may help increase the speed of elimination by adding bulk to the stool and may help improve insulin sensitivity. Insoluble fibers are structural fibers in plants that humans cannot digest and most of these fibers are not fermentable by microbes in the digestive tract. Examples of vegetables that contain insoluble fiber include cauliflower, celery, parsnips, green beans and peas, potatoes, and dark leafy greens.
