Nutrition Statement

When considering the sodium content of our root vegetable slices, it is first necessary to make sure you are comparing similar serving sizes. Our Root Vegetable Slices have a 4 oz or 120-gram serving size. Looking at the same serving size deli ham has approximately 1,178mg of sodium and deli turkey has approximately 1,017mg of sodium. Our root vegetable slices are most comparable to low or reduced-sodium deli meats. 

When considering sodium intake it is also important to consider potassium intake. Including vegetables like spinach, broccoli, beet greens, swiss chard, squash, and tomatoes helps create a balance of sodium and potassium in the diet. 

Note: If you do not have normal kidney function please talk with your healthcare provider prior to making any dietary changes regarding sodium or potassium.

There are many varieties of kale. Our testing has shown some variation in mineral content between different varietals for kale. Generally speaking kale is a good source of vitamins including beta-carotene (eye, bone, and immune health), Vitamin C (collagen production and antioxidant), and Vitamin K (bone health and cardiovascular health), folate (reproductive health and red blood cell function), alpha-linolenic acid (ALA) (anti-inflammatory), lutein and zeaxanthin (prevention of macular degeneration and cataracts). Kale is also a good source of minerals including potassium (cardiovascular health), calcium (bone health), and zinc (immune and hormone health). Kale contains many beneficial phytonutrients such as chlorophyll, myrosinase, glucosinolates, beta-carotene, flavonols, and lignans.

This is one of our favorite vegetables on the farm. They can be eaten raw, roasted, or steamed. Turnips are fat free, cholesterol free, and high in vitamin C.

Many in our communities face hunger—and this may be more true today than ever. Donations are therefore vital in providing good food to those who need it. Farmer Jones Farm and The Chef’s Garden are teaming up with organizations such as The Hunger Network to provide nutritious fresh vegetables to those who are unable to afford or access them. 

Add to your order and we will package and deliver vegetables to an individual or family in need. 

• $25-$50 provides 3-5 lbs. of vegetables

One of our signature crops is fresh spinach -- and we offer multiple varieties. Our delicious root spinach tastes mild, fresh, green and buttery, with natural sugar content off the charts! Brix readings are literally as high as an apple. Our spinach starts off sweet tasting, then finishes with nutty-buttery flavor. For a variety of fresh spinach with a mildly bitter taste progressing into earthiness, choose tropical spinach with its bright red stem and small reddish-green leaves.
