Beets

Spinach
One of our signature crops is fresh spinach -- and we offer multiple varieties. Our delicious root spinach tastes mild, fresh, green and buttery, with natural sugar content off the charts! Brix readings are literally as high as an apple. Our spinach starts off sweet tasting, then finishes with nutty-buttery flavor. For a variety of fresh spinach with a mildly bitter taste progressing into earthiness, choose tropical spinach with its bright red stem and small reddish-green leaves. Our promise: we’ll never grow fresh spinach for maximum yield. Instead, we grow for flavor and nutrition.

The vegetables in this specially curated box are rich in potassium, fiber, protein, calcium, iron, thiamin, riboflavin, niacin, folate, zinc, and vitamins A, B6, B12, C, D, E, and K.
Green leafy vegetables are full of vitamins (A, B vitamins (including folate), C,E,K) and minerals (Mg, K, Ca) and are low on the glycemic index. Green leafy vegetables are also a source of nitrates which when eaten over time may help reduce blood pressure. They also contain antioxidants (ex. carotenoids) which contribute to their benefits for cancer prevention. Your gut bacteria help too, but chewing, chopping, etc. have the greatest impact on increasing sulforaphane (which is one of the most well-known beneficial phytochemicals in brassicas).

Clearwater Jerusalem Artichoke
Clearwater Jerusalem artichokes are incredibly sweet (almost as sweet as sorbet!) with absolutely no starch. Their unique structure makes them even more versatile than potatoes. Nutty and crunchy when raw, they taste like sweet kettle cooked chips when fried and are perfect for dessert when caramelized. Blanched, they gain the texture of undercooked potatoes, perfect for frying afterwards. They’re also delicious pureed with milk and butter; roasted, and charred, giving them brown sugar flavor.
